When I Cook! The Sunday Brunch

Chili Fried Chicken + Arrabbiata Sauce + Mashed Potatoes + Mixed Veg. In White Sauce + Garlic Toast

Sundays have, for always, been the perfect day to cook! 

No time restraints! 

A day of comfort-food!

I'm in the mood for something that my friends and I very much enjoy!

So here's a cooking session dedicated to them and to the shared memories of brunches & cookouts!

Chili Fried Chicken + Arrabbiata Sauce + Mashed Potatoes + Mixed Veg. In White Sauce + Garlic Toast

Ingredients (For 1 Person):
  • 100gChicken (Preferably Boneless, Steak Piece)
  • 1/2 Cup Peas
  • 1/2 Cup Corn
  • 1/2 Cup Chopped Capsicum
  • 1/2 Cup Chopped Carrot
  • 2 Boiled Potaotes
  • 50g White Flour/ Maida
  • Any Choice Of Preferred Bread/Bun
  • 5 Teaspoons Of Garlic Paste
  • 1 Teaspoon Red Chili Powder
  • 1 Teaspoon Black Pepper Powder
  • 1 Teaspoon Green Chili Paste
  • Refined Cooking Oil
  • 5 Tablespoons Butter
  • 2 Cups Of Milk
  • 50g Cheese
  • 4 Teaspoons Minced Garlic (about 5 cloves) 
  • 1/4 Cup Olive Oil OR 1 Tablespoon Butter 
  • 1 Can Diced Tomatoes, undrained 
  • 1 Can Tomato Puree 
  • 4 Teaspoons Crushed Red Chili Flakes  
  • 1 Teaspoon Dried Oregano 
  •  1 Teaspoon Lemon Juice 
  • Salt
Preparation:
  • Smear 3 our of 5 teaspoons of garlic paste on to the slices of preferred bread.
  • Marinade the chicken in the remaining garlic paste, along with the green chili paste, red chili powder, black pepper powder, salt (as desired). Set aside for at least 45 minutes.
Cooking Method:
  • Chili Fried Chicken
    • In a shallow pan, heat 3 tablespoons of oil.
    • Fry the chicken on either side for a minute.
    • Add 1/2 cup of water and place lid. Continue to cook for 3-5 minutes
  • Mixed Veg. In White Sauce
    • White Sauce
      • In a shallow pan melt five tablespoons of butter on low heat/flame
      • Once the butter has melted, stir in the flour spoon-by-spoon (2-3 spoons at a time)
      • Add milk 1/3 cup at a time, whisk through\
      • Add the cheese and whisk through
      • Salt & Black Pepper Powder
      • Simmer and allow to bubble for a minute or two, no further
    • Mixed Veg.
      • Saute all the veggies in 1 tablespoon of butter, no added condiments
      • Once both the parties are ready, mix together and give a good stir.
  • Mashed Potatoes:
    • Peel the potatoes & mashed through (leave a few lumps, they give a hearty homemade feel)
    • Add 2 tablespoons of butter, and whisk through; add salt, black pepper powder and 1/2 cup of milk.
  • Arrabbiata Sauce:
    • Sauté garlic mince in hot oil in a saucepan over medium heat 1 minute. 
    • Add tomatoes and tomato puree. Bring to a boil; reduce heat to low. 
    • Stir in red pepper flakes, dried oregano, lemon juice ; cook, stirring occasionally, 20 minutes.
Plate Up!
