Mixed Veg. Rice in Tomato Gravy & Fried Chicken

...so everybody's got a pick for their comfort food, I've got an assortment!

 I don't have just one combo-meal. I've a few options to pick from, let alone the cuisine!

Be it desi, continental or fusion; I know how to soothe my cravings!

Cooking is my true comfort!

And here I go again, with another recipe: Mixed Veg. Rice in Tomato Gravy & Fried Chicken

Ingredients (For 1 Person):

  • 1 Cup Basmati Rice
  • 1/2 Cup of Peas
  • 1 Small Capsicum
  • 1 Carrot
  • 50g Green Beans/French Beans
  • 1/2 Cup Of Corn
  • 2 Large Tomatoes
  • 1 Onion
  • 7 Cloves Of Garlic
  • 1 Inch Of Ginger
  • Ginger-Garlic Paste
  • Red Chili Powder
  • Black Pepper Powder
  • Red Chili Flakes
  • 1 Green Chili
  • 1 Piece Chicken (Leg/Breast) [*Beef/Lamb/Goat can be alternates to Chicken*]
  • Refined Cooking Oil/Butter
  • Salt (as desired)

Preparation:
  • Soak the rice for an hour. Then boil until half-cooked. Drain excess water and allow to cool.
  • Grate the tomatoes into puree.
  • Cut the carrot and capsicum into small squares or thin slivers.
  • Finely chop the onions, ginger, garlic and green chili
  • Marinade the chicken with a mixture of 2 teaspoons of red-chili powder, 2 teaspoon ginger-garlic paste, black-pepper powder and salt; set aside for at least 45 minutes.

Cooking Method:
  • Mixed Veg. Rice in Tomato Gravy:
    • In a sauce pan, heat 2-3 tablespoons of oil/butter. Saute the chopped onion, garlic, ginger, with the red-chili flakes and green-chili and 2 teaspoons of black-pepper powder; not more than 1-2 minutes.
    • Reduce the heat/flame, add the tomato puree and salt, mix well.
    • Place a lid on the sauce pan and reduce the heat/flame to the lowest possible degree. Allow to cook for 5-10 minutes, make sure you check it every couple of minutes so it doesn't dry out completely.
    • Remove the lid, add the half-cooked rice, the peas, corn, carrot, capsicum, green-beans and mix well.
    • Add just enough water so that all the content within the pan is submerged, should not be more than 2-3 cups.
    • Maintain the reduced heat/flame to the lowest possible degree, put the lid on again and allow to cook for 10-15 minutes. Check at intervals to ensure that it doesn't get over-cooked.
  • Fried Chicken:
    • In a shallow pan, heat 3 tablespoons of oil.
    • Fry the chicken on either side for a minute.
    • Add 1/2 cup of water and place lid. Continue to cook for 3-5 minutes
