Masala Rice with a hidden Veg. Patty topped with Paneer & Tomato Curry and Sprout Salad
So this is another combination I thought up!

Tired of the a-typical Masala Rice with Yoghurt, I prepared: Masala Rice with a hidden Veg. Patty topped with Paneer & Tomato Curry and Sprout Salad.

Ingredients:
  • For Masala Rice
    • 1 tbsp Ghee / Clarified Butter
    • 1 tsp Mustard
    • 1 tsp Cumin / Jeera
    • pinch Asafoetida / Hing
    • few Curry Leaves
    • 1 Tablespoon Ginger-Garlic Paste
    • 3 Green Chili, slit
    • 1 Onion, finely chopped
    • 1 Tomato, finely chopped
    • 1 Teaspoon Turmeric Powder
    • 1/2 Tablespoon Kashmiri Red Chilli Powder
    • 1 Teaspoon coriander powder
    • 1 Tablespoon Garam Masala
    • 2 Cups cooked  Basmati Rice
    • Salt as desired
  • Veg. Patty
    • 2 Large Potatoes, mashed
    • 1 Onion, finely sliced
    • 2 Tablespoons Parsley/Coriander, finely chopped 
    • 1 Egg, whisked
    • 1 cup Bread-Crumbs
    • Salt as desired
    • 1⁄2 Teaspoon Black-Pepper Powder
  • Paneer & Tomato Curry
    • 4 Large Tomatoes, finely chopped
    • 4 Cloves of Garlic, finely chopped
    • 1/2 inch ginger, finely chopped
    • Pinch of Hing/Asafetida Powder
    • a pinch turmeric powder
    • 1 teaspoon Red Chili Powder
    • 1 teaspoon Coriander Powder
    • 1/2 tsp mustard seeds
    • 8 Curry Leaves
    • 1 tablespoon oil
    • Salt as desired
    • 2 Dry Red Chilies, broken
    • 1 Onion, finely chopped or grated.
    • 250g Paneer
Cooking Method:
  • Masala Rice
    • in a large wok/kadai heat theghee and splutter 1 tsp mustard, 1 tsp cumin, pinch asafoetida and few curry leaves.
    • add ½ tsp ginger garlic paste, 1 green chilli and ½ onion. saute well.
    • add 1 tomato and saute till tomatoes turn soft & mushy.
    • add ¼ tsp turmeric, ¾ tsp red chilli powder, 1 tsp coriander powder and ½ tsp garam masala.
    • saute until the spices start to release oil.
    • add the cups cooked rice and salt; mix gently without breaking rice grains.
    • cover and simmer for 4 minutes.
  • Veg. Patty
    • Combine all the ingredients together in a bowl.
    • Form vegetable mixture into small flat patties.
    • Heat 1 tablespoon oil in a skillet. Cook patties on both sides over medium heat for about 8 minutes.
  • Paneer & Tomato Curry
    • Heat oil in a deep-bottomed pan. Throw in mustard seeds. Let them crackle. Add broken red chilies and curry leaves. Saute for 5 seconds.
    • Add chopped ginger, garlic, onions, and hing powder. Continue sauteing till onions become golden. Lower the heat.
    • Add turmeric powder, red chili powder, and coriander powder. Saute for five seconds.
    • Throw in chopped tomatoes. Add salt and sugar. Increase the heat. Mix well. Cover the pan and cook while stirring at intervals. Add some water to keep it wet. You have to cook them till they become mushy.
    • As a final step, add the Paneer slices and continue to cook on simmered flame/heat for another couple of minutes.

Serving:
Serve it while it's hot!
