Paneer Paratha with Sprouts Salad

More than rice I love rotis, chapatis, parathas!

It's light, filling and tastier; at least I feel that way!

So, here I am indulging in a few of my favorite types of parathas. Mind you, there are a few types: 
  • Plain Paratha
  • Mooli Paratha
  • Aloo Paratha
  • Paneer Paratha
  • Kheema Paratha
  • Onion Paratha
  • Gobi Paratha
  • Lauki Paratha
The ones I've mentioned above are my favorites, I'm quite sure there must still be many more that I've yet to discover as I further explore India.

Well getting right to the point; following is the recipe for a yummy 'Paneer Paratha'. 
Simple steps, do it yourself, make a yummy paratha and enjoy!
  • Ingredients:
    • PANEER STUFFING:
      • 2 cups crumbled paneer / cottage cheese, homemade paneer
      • ½ tsp kashmiri chilli powder
      • ¼ tsp garam masala
      • salt to taste
      • 1 inch ginger, grated/paste
      • Fistful coriander leaves, finely chopped
      • ½ tsp aamchur powder / dry mango powder
    • PARATHA DOUGH:
      • 1 cup whole wheat flour / atta
      • Salt to taste
      • 1 tsp oil or ghee
      • Water as required for kneading
      • ¼ cup wheat flour for dusting
    • FOR ROASTING PARATA:
      • Ghee or oil as required
  • Preparation:
    • PANEER STUFFING RECIPE:
      • In a small mixing bowl take crumbled paneer.
      • Add chilli powder, garam masala, aamchur powder and salt.
      • Add ginger and coriander leaves.
      • Give a good mix and keep aside.
    • PARATHA DOUGH RECIPE:
      • In a large mixing bowl, take wheat flour add salt.
      • Add water and knead the dough for 5 minutes.
      • Grease the dough with a tsp of oil and rest for atleast 20 minutes.
  • Cooking Method:
    • MAKING THE PARATHA
      • Pinch a medium sized ball dough, roll about 5 inches in diameter.
      • Place the prepared stuffing in the center.
      • Take the edge and start pleating bringing to center.
      • Press the pleats from center.
      • Sprinkle some flour and roll to of a chapati size.
    • ROASTING PANEER PARATHA RECIPE:
      • On a hot tava place the rolled paratha and cook both sides.
      • Add oil / ghee and press slightly.
  • Serving
    • Serve hot paneer parathas with sauce, raita or pickle; even a quick-fix salad would be perfect.
