When I Cook!

Here's something that my grandmother cooks, and it's a dish that I love! A curry of mutton, potato & green veggie, just love the combination. Ok! I've said green veggie, simply because this is a dish where the veggie could be any green vegetable(capsicum, zucchini, okra, etc).

Ingretdients:

Mutton 250g
Turmeric powder 1 teaspoon
Salt 1 teaspoon
1 teaspoon Black Pepper powder
1 teaspoon Red Chili powder
1 teaspoon Coriander powder
3 Green Chilies
3 Dry Red Chilies
Ginger-Garlic paste 3 tablespoons
Mustard oil 1/3 Cup
3 Bay leaves
3 Black Cardamom pods
2 Onions
2 Tomatoes
Fresh Coriander leaves
choice of Green Veggie

Prep.:

Chop the onions and tomatoes.
In a small bowl, prepare a mixture of the ginger-garlic paste, turmeric powder, red chili powder, black pepper powder, coriander powder and salt.
Marinade the mutton with turmeric powder, black pepper powder and salt.

Cooking:

In a pressure cook, heat the mustard oil and saute the whole spices (bay leaves, black cardamom, red chilies).
Add the mutton pieces and toss in the oil until all the pieces are generously seared. Toss in the chopped onions. Keep mixing contents of the cooker till the onions begin to lose moisture.
Pour in the ginger-garlic paste & spice mix. Mix well!
Add the chopped tomatoes and saute till the tomatoes begin to soften into mush.
Add the green veggie.
Add 3 cups of water and drop in the green chilies.
Place the lid, and cook for 3 whistles.
If at 3 whistles, meat is still uncooked, put the lid back on and cook for additional 2 whistles.

Service:

Pour curry into a serving dish and garnish with coriander leaves.
Serve with steamed white rice or choice of bread.
