When I Cook!
It's the middle of week, and I'm like: FISH!
Something to listen to as you read on - Musique: Lingua Franca! Vol.07
Ingredients:
- Basa fish fillet
- Tomatoes (chopped)
- Potatoes (finely sliced)
- Garlic (paste or chopped)
- Zucchini (finely sliced)
- Aubergine (finely sliced)
- Carrot (finely sliced)
- Cheese (grated or shredded)
- Red Chili flakes
- Italian mixed herbs
- Salad greens (mixed)
- Mustard powder
- Black-Pepper powder
- Salt
- Butter
- Mustard oil
Prep.:
For the ratatouille:
Line a deep pan with butter, dribble some mustard oil as well. Sprinkle chopped tomato to form a thin layer, then take the slices of aubergine, potato, carrot & zucchini and place them in the pan. On top of this sprinkle the remainder of chopped tomatoes.
In a bowl take 2 cups of tomato pure, add black-pepper powder, red chili flakes, cheese, garlic paste & Italian mixed herbs. Pour this sauce mix on top of the vegetables, evenly. Cover with a double layer of aluminium foil.
For the basa:
Take the basa fillets and rub spice mix. The spice mix is made of:
Mustard powder
Black-Pepper powder
Italian mixed herbs
Salt
Mustard oil
Cut squares of aluminium foil, and pack the fillets inside the squares.
For the salad:
Shred the greens.
Cooking:
For the ratatouille:
Place pan on stove and cook on low heat for 30-45 minutes, occasionally lift foil to check progress.
For the basa:
Heat water in a deep-dish, place steamer stand. Put the fish packs on top of the stand. Steam for 10-15 minutes. |
For the salad:
In a pan, melt butter mixed with black pepper. Pour on the greens and toss.
Voila! You're set!
