Paneer Masala

Ingredients:

 
  • Paneer 250g (cut into cubes)
  • Onion 1 (finely chopped)
  • Tomato 1/2 (finely chopped)
  • Garlic 5-7 cloves (chopped or paste)
  • Coriander/Cilantro leaves (roughly chopped)
  • Cumin (roasted & ground)
  • Turmeric powder 1 tablespoon
  • 3 Bay leaves
  • Garam masala 3 tablespoons
  • Red food color
  • Salt
  • Cooking oil 

Prep.:

 ...roast the cumin, and ground into powder. Mix will turmeric, garlic, garam masala, salt, a pinch of red food-color and half a cup of water to make a spice solution.
...in a wok heat enough oil to shallow fry the paneer cubes. Fry fro 3-5 minutes, remove from oil and set aside to allow excess oil to drain off.

Cooking:

 
 ...in a pan heat oil, saute the bay leave and onions for a couple of minutes. Pour the spice solution, mxi well and let it slightly evaporate.
 
...now drop in the paneer cubes, and gently mix again in order to coat all the pieces properly with the masala. Add the chopped tomato and 4 cups of water, stir to mix well. Place a lid, and cooked on low heat for 15-20 minutes.

Garnish:

 
...garnish with chopped coriander/cilantro.
