...just a throwback to some of the things I've cooked!!!

Quick-fix:

What you need... 
  • 1 Chicken Breast, 
  • paste of 1 Green Chilli, 
  • 3-5 cloves of crushed Garlic, 
  • Italian mixed herbs, 
  • chopped Coriander
  • Black-Pepper powder
  • Salt
  • Oil or Butter
  • Bread
  • Iceberg Lettuce
...make marinade from all the spices & herbs. Score the chicken breast and rub the spice mix on to the chicken breast. Set aside for a minimum of 15 minutes, to allow the flavors to seep in.
Take the bread slices and smear butter on all sides, toast on all sides until golden. Shred the lettuce. 
On a skillet, heat oil/butter. Cook chicken on either side on high heat for a minute. Reduce heat and place lid on skillet, cook chicken on both sides for a total of 5 minutes.
...now all one has to do is stack it up and enjoy a hearty bite!!!

Curries:

...Potato Curry & Egg Curry...
 
What you need...
  • Onions & Tomatoes finely chopped (2 of each)
  • 3 Potatoes (boiled and cut into quarters)
  • 3 Eggs (boiled)
  • 6 Green Chilies (slit or chopped)
  • Coriander (finely chopped)
  • Garlic (chopped or paste)
  • Turmeric powder
  • Garam Masala
  • Basmati Rice
  • Butter/Ghee/Oil

...in 2 woks heat oil; in the 1st add the portions equivalent to 1 onion, paste 5-7 cloves of garlic, 3 green chilies. Saute until the onion begins to change color. In the 2nd wok, heat oil and stir fry the boiled eggs till they form a golden-brown crust. Once the eggs are done and the 2nd wok is empty, repeat the same process as the 1st wok. 
In a small bowl mix 3 table spoon of garam masala, salt & turmeric powder along with a tablespoon water; add this mixture equally into both the woks. Stir well. 
Add the potatoes into the 1st wok, stir & saute till the potatoes are well coated with the masala mix. Now drop in some of the chopped tomatoes, add a tablespoon of butter/ghee/oil and continue stirring for another minute. Add 2 and half cup of water, stir and place lid. Cook on low heat for 15 minutes.
Alongside, in the 2nd wok; drop in the remainder of chopped tomatoes add a tablespoon of butter/ghee/oil and continue stirring for another minute. Pour 2 and half cup of water into the wok , stir and place lid. Cook on low heat for 10 minutes. Halve the eggs. Remove lid and place the halved eggs into the wok, and stir gently. Re-lid and continue cooking for another 5 minutes.
Best enjoyed with steamed basmati rice! 
...garnish with chopped coriander.

Continental Concoction:

 Pasta D.I.Y.
What you need...
  • Spaghetti (partially cooked)
  • Bell-Peppers/Capsicum (sliced or cut in squares)
  • Pasta seasoning
  • Bacon
  • Chicken cocktail sausages (havled)
  • Arabiatta pasta sauce
  • loaf of Garlic Bread
  • Olive oil


...toss the spaghetti with pasta seasoning.
...cut the bread into slices.
...in a pan heat 2 table spoons of olive oil. Stir fry the sausages; once the sausages are done, fry the bacon in same pan till crisp.

...in another pan, heat 3 tablespoons of oil and stir-fry the peppers. Add 5 tablespoons of the pasta sauce along with a cup of water. Cook on medium heat, till the water is partially evaporated.
Plate as you like, buon apetito!
