When I Cook!
Saturday Night: Table For One!
I'm in the mood for some pasta tonight! |
Ingredients:
- Fusilli Pasta (boiled & strained)
- 5-7 cloves of Garlic (finely chopped)
- 1 large Onion (finely chopped)
- 2 Tomatoes (finely chopped)
- 2 Potatoes (boiled)
- 50g Butter
- Olive oil
- 1 cup of Cream or Milk
- Mixed Italian Herbs
- 5 tablespoons of 'Fun Foods' Pasta Sauce (or of any make you like)
- Red chilli flakes
- Black-Pepper powder
- Salt
- A cup of Rice flour
- Chicken 250g (boiled & shredded)
- 500ml Chicken stock
- Bread
The preparation of this dish is divided into 3 parts; the third & final part being plating.
Prep.:
Chop the tomatoes, the garlic you could have finely chopped or crushed into paste. Boil and peel the potatoes, also chop the onions. It is necessary that you have all the ingredients set for cooking before-hand.
Cooking:
Let's begin with the potatoes. Out of the two potatoes, crush one with the shredded chicked; with a seasoning of red chili flakes, black-pepper powder, salt and Italian mixed herbs. Then take portions of the mixture and mold them in to round balls. Heat a dollop of butter with a table spoon of olive oil in a pan. While the oil is heating up, dust the meat balls in rice flour. Place the flour coated meatballs in the pan and shallow fry for 2 minutes on both sides.
As for the second potato; take a bowl with a dollop of melted butter and crush the potato into it. Add salt, black-pepper, red chili flakes and half a cup of cream/milk. Whisk profusely till the mixture is almost batter like, et voila, Mashed Potato!
Finally, in a deep ended pan, heat 4 tablespoons of olive oil along with a nice scoop of butter. Once the butter melts, add the onion & garlic and red chili flakes; stir fry till you notice a change in their color and the strong aroma of butter & chili hits your senses. Now add 5 tablespoons of pasta sauce, mix well! Add the chicken stock and cook on low flame for 10 minutes, stirring occasionally. After that pour it through sift to remove solids, scrape with the back-end of a spatula to get the maximum out the remaining spice mix. Sauce is ready!
