Fast & Fine

Today's core ingredient is Minced Meat.


Ingredients:

  • 250g Minced Meat (chicken/beef/lamb)
  • 7-10 Garlic Cloves(crushed into paste)
  • 1 medium size Potato(boiled)
  • 2 Green Chilies(finely chopped)
  • 2 Red Chilies(finely chopped)
  • 1 cup Rice Flour
  • 2-5 teaspoons of Red Chili flakes
  • 2-5 teaspoons of dry mixed Italian herbs
  • Butter & Cooking Oil
  • 3 Burger Buns
  • Mozzarella Cheese(shredded)

Garnishings:

  • Sprigs of Coriander or Cilantro or Parsley(finely chopped)
  • Béchamel sauce.
  • Sliced onion

Prep. & Cook


Mash the potato into the mince, along with the chopped chilies and garlic. Add salt as per desired taste, mix well and set aside for 15 minutes.



Get two medium sized bowls, into one pour the rice flour and in the other put the dry red chilies and Italian mixed herbs.

 

Out of 250g of mince you should get 3 mince patties. Now, place the patty in the bowl of chilies and herbs, gently rub the mixture of chili & herbs till patty is completely coated. Next apply a layer of rice flour, dust off excess.

 

In a shallow end pan, melt a dollop of butter and a tablespoon of cooking oil. Once the the butter has melted, place the patty into the pan and set flame on high. Maintain the flame for a minute on each side, while gently pressing out excess water with a spatula. Reduce the flame and flip patty occasionally for another 3-5 minutes.


As I said, out 250g of mince, you should ge able to get at least 3 patties. Place on tissue to rid excess oil.


Take the burger bun, slice into two. Smear a careful layer of butter or margarine on both halves and toast on a flat plan until crisp.


Place the patty between the halves. Top off the patty with mayonnaise and red chili tobasco and a tad bit of dijon mustard. The you have it! Mind you, not for the faint of heart, quite a hit of chilies involved.

Slice the patty delicately into 4 equal parts, set on plate. Use the chopped green and onion rings to garnish, and dribble some béchamel on top.


Take a burger bun, and cut slices into it but don't cut into the base. Stuff the gaps with mozzarella and chilli flakes. Grill in oven  for 10-15 minutes and done!
